I am feeling really behind today. My to-do list is a mile long and there’s no way I’m going to get it all accomplished today. I really got very little done yesterday, and I thought I was going to have lots of time to tackle some little projects. Then, last night, I had the worst night of “sleep” I’ve had in a long time. It was awful. I was super tired, thought I’d fall right to sleep, but I just couldn’t. When a finally started to fall asleep around 1:30am, the thunder and lightning outside kept waking me up. I think I got about 4 hours of sleep, and I can so feel it! I’m not taking a nap, though, because I want to sleep well tonight. I actually think it may be the caffeine I had yesterday. I gave up my Diet Pepsi at the beginning of the year and now average 2-3 a month (instead of a day like I used to). Yesterday I had a couple glasses around 2pm. I guess my body just isn’t used to it. I’m definitely avoiding all caffeine today.
However, despite feeling a little behind, I have a plan!! And I won’t let the tiredness or mile long to do list keeping me from eating well this week. Here’s my menu plan and my first priority to accomplish this evening is to make the Broccoli Cheddar Potato Soup. I found a lighter recipe, and I’ll share it with you and give you my thoughts on it after I make it. I’m hoping it will be a winner.
